Background:
Amylase is an enzyme that catalyzes the hydrolysis of starch into sugar and is found in the saliva of humans and some other mammals. The pancreas and salivary gland make amylase (α-amylase) to hydrolyze dietary starch into disaccharides and trisaccharides, which are converted by other enzymes to glucose to supply the body with energy. All amylases are glycoside hydrolases and act on α-1,4-glycosidic bonds.

Assay Principle:
Under heating conditions, reducing sugar reacts with 3,5-dinitrosalicylic acid to form a brownish-red substance, which is inactivated by the thermal stability of β-amylase, and then the enzymatic activity of α-amylase is determined.
