Applications: Lipase from porcine pancreas Type II can be used to determine the indigestible fraction of plant source that is resistant to the action of digestive enzymes.

Unit Definition: One unit will hydrolyze 1.0 microequivalent of fatty acid from triacetin in 1 h at pH 7.4 at 37°C (when pH 7.7, using olive oil as substrate).
